With the clamp on the end of the handle you firmly clamp the sandwich between the irons, and thanks to the long wooden handle you easily turn the iron to cook your sandwich on the other side as well. The sandwich iron is suitable for use on gas, electric stove and for the barbecue. So you can control the heat (read: crispiness) entirely to your liking.
